I love any reason to celebrate with a certain food. I like to eat Pie on Pi Day (3/14), and I consider Cinco de Mayo to be my Tex-Mex food day.
Granted, I had no idea there was a Shrimp Scampi Day (April 29th) or a Men Make Dinner Day (November 6). But there are some of those I could get behind.
I may not celebrate Cinco de Mayo the right way, and I may eat my Tex-Mex style food way more often than once a year or even once a week, but I do know that the food below is absolutely delicious.
You should consider making one of them Monday if not this weekend. The dips are heavenly, the enchiladas are spicy and delicious, the tacos are a cinch to make, the fajitas have the absolute best flavor, and the dessert is oh so amazing!
Butternut Squash and Black Bean Enchiladas are made each and every time I can get my hands on some butternut squash. Plus, it's gluten free, vegetarian, and all around yummy!

I think the only difficulty you are going to have on Cinco de Mayo is trying to decide which of these amazing foods should you make.
Though, you could always celebrate all weekend or all week long and enjoy ALL of these meals!
