Quick & Healthy Spinach Bean Dip

I full on realize that this dip may not look fancy, but let's be honest, does any bean dip look good.  Plus, there is the fact that I can't afford a fancy camera so I take pictures of all of my food and crafts with my oh so fancy iPhone camera.  Jealous? Really you shouldn't be jealous of my phone being my only camera.  You should be glad that my pictures are real, not fancified (a word I realize is made-up), and not photo shopped.  

Okay, so this dip doesn't look amazing, but let me just say that it tastes more than amazing, is healthy  (besides healthy ingredients it has spinach which is almost equivalent to your green smoothies:), it's incredibly fast to put together, you dirty only one bowl and spoon, and everybody loves this dip.  Seriously, it's amazing!

After all of the holiday festivities (cookie exchanges, parties, my baking addiction, etc.) we are a little sugared out.  We were in need of something healthy but fast b/c there is way too much going on.  Therefore, we had this dip for dinner.  

However, if you are not "dip eaters" for dinner then use corn tortiallas instead of chips and have healthy spinach black bean tacos, or enjoy this dip for a gathering of any kind (party, family game night, New Years, etc.).  Oh, and if your husband is anything like mine there will be a lot of football watching the next week or so with the plethora of Bowl games.  So, make up this dip and you will be happy b/c it's fast and healthy and your football watchers will be happy b/c it is delicious and oh so addicting.       

And to top off all of the healthy delicious goodness this dip provides I bet you have almost all of the ingredients on hand.  Mix all of the ingredients together, cook it, and serve it with tortilla chips of your choice.

Spinach Black Bean Dip

Active time: 5 minutes
Inactive time 30-45 minutes

Ingredients: 
  • 1 box Creamed Spinach thawed
  • 1 can of Chicken drained
  • 1 can of Black Beans rinsed and drained
  • I cup of Salsa 
  • 2 cups of Cheese (Mexican, Cheddar, Monterrey Jack, or a mix of any kind)
Directions: 
  1. Heat oven to 350 degrees. 
  2. In an oven safe bowl mix the above ingredients. 
  3. Cook at 350 for 30-45 minutes until it's bubbling and oh so delicious.  
  4. Enjoy.

This quick and healthy spinach black bean dip is amazing!  Make it and enjoy it and feel healthy eating it!  The only trouble you may have is to stop eating it.
