Quick and Easy Broccoli Cheese Soup- Tasty and kid friendly. Alohamora Open a Book

We live in Arizona and may not have as many (or any for that fact) cold snowy winter days.  If we did, this soup would be perfect for a day like that.

Even without those cold winter snowy days this soup makes an appearance quite often in our household.  It's delicious no matter the weather.  

This Broccoli Cheese Soup is quick, easy, uses common ingredients, and the kiddos as well as the husband loves it.

It's a fabulous classic soup recipe to have on hand... so I decided I'd share it with you so you can have some of its home good comfort food deliciousness whether you live in a warm or cold locale.

Broccoli Cheese Soup
Recipe: Alohamora slightly adapted from Mel's Kitchen Cafe
Active Time: 30 minutes
Inactive time: 15 minutes
Servings: 4 adult

Ingredients: 

1 can (15oz) chicken broth
1/3 c. diced onion
1/4 c. butter
1/3 c. flour
1/4 tsp salt 
1/4 tsp pepper
1/4 tsp ground mustard
2 c. milk
1 1/2 c. shredded cheddar cheese (preferably sharp or extra sharp)
3/4 c. shredded mozzarella cheese 
3-4 c. (about 2 crowns) chopped broccoli, but you can add more broccoli if you love it. You can also use frozen broccoli but be sure to blanch it first.

Instructions: 
  1. In small pot simmer covered the can of chicken broth and diced onion for about 15 minutes until the onions are soft and transparent.
  2. While the chicken broth and onions are simmering I use a pair of kitchen scissors and cut the 2 broccoli crowns.  B/c I have smaller kids I either cut the broccoli small to start with or just chop it smaller in their individual bowls after.  
  3. Put the chopped broccoli in a microwaveable bowl, add a couple Tbsps of water, cover with saran wrap, and microwave for 3 minutes. 
  4. Over medium heat in a medium to large pot melt the butter and then add the flour, salt, pepper, and ground mustard.  Stir quickly until mixed in and smooth thick mixture.  
  5. Add the milk to the flour mixture and stir constantly for about 5 minutes until the mixture starts to thicken.  
  6. Next, pour the chicken broth/onion mixture into the milk/flour mixture and stir to combine.
  7. Then add the cheeses and stir constantly until cheese is melted. 
  8. Finally, stir in the steamed broccoli and enjoy.
