Everything But The... Cookies

This cookie has been in the works for a couple of weeks.  I had the idea of a kitchen sink type cookie, but then it took some bombs to not so fabulous cookies before the perfect combination came to be.

This is now the perfect combination that includes a little bit of everything.  

Just a glance at the recipe will surprise you; these cookies have just about Everything but the Kitchen Sink in them.

The combination of potato chips, pudding, graham cracker crumbs, and oats provides delicious flavor, fabulous texture, and all around sugary goodness in a cookie you won't be able to put down.

This perfect combination of everything cookie is addicting.  If you are anything like me, where you strive to have self control but don't really, you'll start by eating just one cookie after lunch and come to realize your've ate 8 cookies.  A little ooops, but they are oh so delicious I coudn't didn't want stop.  

With how addicting these cookies are it's a good thing this recipe makes a plethora.  You can eat your 8 for lunch dessert and then still have plenty to bring them to friends, soccer games, or freeze the cookies or dough for cooking at a later use.

Everything But The... Cookies
Alohamora: Open a Book
Active Time: 45 minutes
Inactive Time: 30 minutes
Makes 6 dozen

Ingredients: 

1 c. butter
1 c. butter flavor shortening
1 1/2 c. sugar
1 1/2 c. brown sugar
1 small box (3.5 oz) butterscotch pudding
3 eggs
3 tsp vanilla
4 c. flour
1 1/2 tsp baking soda
1 1/2 tsp salt
1/2 c. rolled oats
1/2 c. graham cracker crumbs
1 c. (about 2 handfuls) of kettle potato chips
3/4 c. butterscotch chips
1 1/2 c. milk chocolate chips

Directions: 
  1. Preheat oven to 350. 
  2. Cream butter, shortening, and sugars together until light and fluffy.  
  3. Add the pudding mix, followed by the eggs one by one and then the vanilla.  Mix until blended well.   You may have to use a spatula to be sure the sides get mixed in well enough.  
  4. In order add the flour, baking soda and salt.  Mix it until just combined.  While the stand mixer is on low add the oats and graham cracker crumbs one at a time.
  5. Next, add the potato chips, but crush them with your hand as you put them in the mixer. .  
  6. Once everything is combined add the butterscotch and chocolate chips and mix until combined.
  7. Using a medium size cookie scoop or two spoons about 1 1/2 TBSP (though a cookie scoop is a wonderful invention and you should look into investing if you love cookies), and place cookies on a cookie sheet to bake for 8-10 minutes.  Mine took 9 minutes.
