Faux Garlic Mashed Potatoes Using Cauliflower

Happy April Fools Day!  I love a good trick, but I am more into the fun ones.  For example, I  have done some amazing pranks such as an apartment full of packaging peanuts or a entire apartment living room set up on the front lawn.  Those may be some of my most elaborate tricks/prank.  Notice they aren't mean and no damage was made it was just for fun. Though the trickster always thinks it's fun. :)

Since April Fools is all about trickery  I figured a little faux/mock mashed potatoes was the perfect recipe to share with yall. 
For Sunday dinner, we had some amazing Faux Garlic Mashed Potatoes Using Cauliflower along with the awesome classic meatloaf recipe I posted yesterday.  We added some sauteed swiss chard on the side and we had ourselves a flavorful, delicious, low carb, and healthy meal.  Yum, I'm still drooling over it!  

You could easily make this entire meal gluten free just by changing the bread in the meatloaf.

As far as the these awesome mock mashed potatoes is concerned I was amazed by how spot on they look like mashed potatoes.  They are twinners in the looks department. 

Mashed Cauliflower has a bit of a taste difference, but it was actually a pleasant difference b/c it actually had flavor.  My whole family, toddlers and all, found these "mashed potatoes" to be a winner.

You should give them a shot for a healthier side dish that is incredibly fast to make.  

Faux Garlic Mashed Potatoes using Cauliflower
Recipe: Alohamora slightly adapted from Food Network
Active Time: 15 minutes
Inactive Time: 10 minutes
Servings: 2   

Ingredients: 

1 head cauliflower
1/8 tsp salt
1 Tbsp cream cheese, softened
2 Tbsp Parmesan cheese
1/4 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper


Directions: 
  1. Wash your cauliflower and then cut or use scissors to cut the cauliflower into small pieces into a medium pot. 
  2. Cover your cauliflower pieces with just enough water to cover it and add 1/8 tsp salt.  
  3. Cook your cauliflower on high in boiling water until soft; it ends up being about 5 minutes. 
  4. Drain the water from the pot, and then place your cooked cauliflower on paper towels or a hand towel to pat dry.  You want the cauliflower to be as dry as possible, but you do not want the cauliflower to cool.  This drying process should take just a minute or so.   
  5. In a small to medium bowl place your cooked cauliflower, cream cheese, cheese, garlic powder, salt and pepper. 
  6. Use an immersion blender (food processor or blender works fine as well) and puree your "mashed potatoes" until almost smooth or a consistency you prefer. 
  7. Enjoy immediately.
