These Fish & Chips are easy to make, taste a million times better than any of that foof fish that comes out of a box, and it's healthy.
Plus, if you use Gluten Free Rice Krispies you've got a Gluten Free meal.
My husband and I have made this exact meal quite a few times in the past month b/c of it's deliciousness; the bonus is the kids seem to thoroughly enjoy this meal and scarf it down quickly and happily.

Servings: 2-4 (about 8-12 fish bites and 16-24 chips/steak fries)
Ingredients:
For the Fish:
1/2 lb or 2 cod filets (can use another white firm fish as well)
3/4 c. Rice Krispies
1/8 salt
1/8 chipotle chili powder
1 egg white
For the Chips:
1 large russet potato
1 tsp olive oil
1/4 tsp garlic powder
1/4 tsp dried rosemary
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp paprika
Instructions:
- For the fish, preheat oven to 450. Place a cooling rack inside a large rimmed cookie sheet so you have a raised cooking surface with space underneath. Spray the cooling rack thoroughly with cooking spray.
- Pour the Rice Krispies in a medium bowl and crush the cereal with a glass cup. You can crush however little or much that you want. I find it a little better if it is crushed just a tad more than you think you should. Add the seasonings and mix them well into the crushed cereal with a fork or spoon.
- In a small bowl add the egg white and whip it with a whisk for about 5 minutes until many bubbles appear on the surface.
- On a cutting board cut the cod filets in about 2 inch pieces.
- One at a time dip the fish bites into the whipped egg white, and then place the egg white covered fish into the crushed cereal mixture to thoroughly coat the fish bite. Finally, place the coated fish bite onto the cooling rack placed inside a rimmed cookie sheet.
- Completely coat all of your fish bites and cook them at 450 for 20-25 minutes. The bigger your fish bites the longer you will need to cook them.
- For the chips, line a small pan with aluminum foil and spray with cooking spray.
- Clean and scrub your potato and then cut it in half. Cut your half into half again so you have 4 large potato pieces. Finally, cut those four pieces into approximately 4-6 steak fry/potato wedge slices each.
- In a medium bowl place your cut potatoes and add the remaining ingredients. Stir the seasonings and olive oil to completely and as evenly as possibly coat the potatoes.
- Finally, in a single layer place your potato wedges on your lined sheet. Cook the potato wedges/steak fries at 400 (or you can throw them in at the same time with the fish bites) for 30-35 minutes until the edges are slightly browned and crispy.
- Enjoy your delicious fish and chips!
