I recently made, and have been enjoying all week Butternut Squash Black Bean Burgers.
This meatless veggie burger is healthy, ridiculously filling (I struggle to finish the one burger), full of vegetables, and all around delicious. If you are looking for an alternative to a beef burger, give this Butternut Black Bean Burger or Grilled Pineapple Teriyaki Black Bean Burger a go.
So so delicious!
Butternut Squash Black Bean Burgers
Recipe: Alohamora slightly adapted from Peas and Crayons
Active Time: 20 minutes
Inactive Time: 45 minutes
Servings: 4 burgers
Ingredients:
1 Tbsp olive oil
1/3 c. onion, diced
1/3 c. shredded carrots
2 cloves of garlic, smashed and minced
1/2 tsp seasoning salt
1/2 tsp garlic powder
1/2 tsp dried parsley
1/8 tsp cayenne pepper
1 medium butternut squash cubed and roasted then pureed (about 1 cup)
1 can (14.5 oz) black beans, rinsed, drained, and pureed
1 1/2 c.oats, rolled or quick
1 egg, large
Toppings: (Optional)
4 burger buns, lettuce, tomatoes, ketchup, mustard, cheese, bbq sauce, avocados, mayonnaise, butter, fry sauce
Instructions:
- Line a pan, tupperware, or plate with parchment or wax paper.
- Add your olive oil to a small pan over medium to high heat and saute the onion, carrots, and garlic for 3-5 minutes until the vegetables are soft.
- Add the vegetables to a medium bowl and add your seasoning salt, cayenne pepper, garlic powder, and parsley. Stir to combine everything.
- Cube and roast your butternut squash using the steps found here. Then puree the squash. You can do this ahead of time.
- Using a food processor, immersion blender, or blender puree/mash your rinsed and drained can of black beans.
- Add your pureed black beans and butternut squash to the medium bowl with the vegetables and stir to combine everything.
- Next, add your oats to the bowl and stir to combine everything.
- Finally, add your egg and use a fork to combine everything.
- Divide the mixture into 4 and roll them into balls and then press them to form burger patties.
- Place the burgers onto the prepared plate or pan and place them in the fridge for at least 30 minutes. You can make these the day before and leave them in the fridge until you are ready to grill/cook.
- Cook your burgers on the grill or in a pan for a 3-5 minutes on each side until they are cooked, hot, and have a warm center. I love having charred grill marks on my burgers.
- Serve your burgers with buns and any toppings you desire. I do think mayo, fry sauce, bbq sauce, ketchup, mustard, or a sauce of some kind are necessary toppings along with lettuce and tomatoes.

- Store leftovers in the fridge in a sealed container.
