Simple Oven Barbecue Meatballs

Actually simple Oven Barbecue (BBQ) Meatballs.  No stove necessary, just stick them in the oven, top them with bbq sauce, and you are in heaven.  Alohamora Open a Book http://www.alohamoraopenabook.blogspot.com/

I've loved the idea of homemade meatballs, but I usually avoided them b/c they either required at least two different kinds of meat, or they required you to cook them first on the stove and then in the oven or crock-pot.  I always felt that was way too much effort for dinner.  I prefer easy dinner options.  

However, I was really craving meatballs, and I finally found a recipe that required only ground beef and the oven.  There are no extra steps or multiple kinds of beef.  

These Simple Oven Barbecue Meatballs are easy to make and taste delicious!  

My father in-law told me more than 3 times that I needed to keep this recipe, and I feel you should be able to have access to it as well.  It is far to delicious and simple not to share. 

Oven Barbecue (BBQ) Meatballs
Recipe: Alohamora adapted from MoneySavingMom
Active Time: 30 minutes
Inactive Time: 40 minutes
Servings: 24, 1-1.5 inch meatballs

Ingredients: 
1- 1 1/2 lbs ground beef (I used 93% lean)
1 egg, large
1 c. milk
1 c. oats
1/4 c. bread crumbs 
1/3 c. onion, diced
1 tsp salt
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp pepper
BBQ sauce (bottled or homemade)

Directions: 
  1. Preheat oven to 350 degrees and grease a 9x13 Pyrex or baking pan.  Though if you only have a cookie sheet with a raised edge you can use that as well.  
  2. In a large bowl combine the beef (ground turkey would work fine as well though the flavor would be a bit different), egg, milk, oats (quick or regular), breadcrumbs, and onion with a fork and stir it until it is well combined.
  3. Add the salt, chili powder, garlic powder, and pepper to the bowl and stir it with the fork until it is well combined.  
  4. Use your hands and shape 1 to 2 inch meatballs.  Place the uncooked meatballs in your prepared pan.  These meatballs will be sticky a bit, but they are delicious.  If you like drier meatballs add 1/4 cup more breadcrumbs to the meat mixture.  
  5. Bake the meatballs at 350 for 15 minutes.  
  6. Top the meatballs with BBQ sauce.  Feel free to use as much or as little barbecue sauce as your heart desires.  
  7. Bake the bbq sauce covered meatballs for 15-20 minutes longer until they are no longer pink. The meatballs will get a little crisp, but they will still stay soft on the inside.  
  8. Enjoy! 
  9. Store leftovers in the refrigerator, and heat up the meatballs in the microwave at half power.  The leftovers are delicious... I happily ate them for days.
